Coconut pancakes

2-3 dl rice flour or wheat flour
salt
6 dl coconut milk
2 eggs
butter for frying

Banana salad
3 ripe bananas
half limes' juice

For serving
3 tbsp. coconut flakes
3 tbsp. dmerara sugar
peel of half a limes or vanilla-tasted syrup

Mix flour and salt in a bowl, whip in coconut milk and eggs. Make thin middle-sized or small pancakes on a pancake pan.

Grate the lime peel, slice the bananas and dip them in lime juice. Fry the coconut flakes for a moment on a dry pan, then add sugar and lime skin.

Serve the hot, thin pancakes with banana salad and the mixture of coconut and sugar, or pour vanilla syrup over the banana slices.
