Bacon pancake

1 pkg oatmeal pancake mix
(2 eggs)
140 g pancetta cubes
1 small leek
1 red onion
1 red sweet pepper

Garnishing
1 pot wild rocket

Chop leek, garlic and paprika. Fry the pancetta cubes until crispy golden brown, add the chopped onions and half of the peppers. Continue frying until the vegetables have softened slightly.

Place the mixture in a baking dish. Prepare the pancake batter according to the instructions on the package. Pour over the other ingredients and season with black pepper. Bake at 175 ̊C for about 45 minutes. If you prefer a more solid structure, mix two eggs into the pancake batter. Garnish with fresh rocket and peppers.
