Farmhouse tortilla for four

1 dl olive oil
6 parboiled large potatoes
2 large onions
3 cloves of garlic
1 red sweet pepper
1 yellow sweet pepper
250 g of cold-smoked slices of pork or ham
8 eggs
Salt and pepper
Parsley and rocket for decorating

Peel and chop the boiled and cooled potatoes. Chop the onions and peppers. Cut the ham or bacon into small cubes, brown in large frying pan until crispy and put the meat aside for a while. Pour a good amount of olive oil in the pan and add the cubed potatoes in the pan. Turn and brown them for 10 minutes. Add onion, pepper, and garlic, and continue cooking until the vegetables have softened. Add the cubes of ham in the pan. Whisk the eggs in a bowl and pour the egg mixture on top of the fillings in the pan. Mix so that the mixture is spread evenly. Reduce temperature and cook until the omelette has congealed and obtained a beautiful colour. Sprinkle with a good amount of parsley and rocket.
